Food: Seared Scallops with Mango-Melon Salsa & Coconut Rice

My first real post, how exciting.  And wouldn’t you know it, it’s about food!  I’ve been dying to make this recipe I happen to stumble across in steamykitchen.com.  As the title indicates it is seared scallops with a mango-melon salsa served with coconut rice. 

I wasn’t too sure how to buy scallops but then I was with a friend at Trader Joe’s, and there they were… frozen but available.  The bag has around 20 scallops set me back $10.00, which I guess is not bad considering how expensive scallops can be.  Armed with the main ingredient I felt confident that I could make this recipe. 

I started making the coconut rice.  I’m so used to doing it the way my mom taught me, that I found it difficult to believe that the rice would turn out good.  But I was pleasantly surprised with the coconut rice.  It was very tasty.  Everyone in the house really liked it.

Then I made the mango-melon salsa.  It was fairly easy just chop, chop, chop, squirt, salt, pepper & paprika and you are done. 

 

I won’t even lie about the hard time I had making the scallops.  All along I was thinking of Chef Ramsay screaming “THEY’RE RAW, YOU SILLY COW!” or “THEY ARE RUBBER!”  Then I was very concern for my family since they would be the ones tasting it.  In any case, it is safe to say that I won’t be cooking scallops anytime soon. One: I didn’t like it (first time having them). Two: No one else liked it (their first time too).  At least I can say that I tried them. 

Maybe if we have them when a professional is making them we will enjoy them more, but in the mean time no scallops in this house!

    Dear Andriz, that recipie sounds delicious!! I love scallops, of course I am used to cooking them fresh, right out of the ocean. i would recomend buying them at the fish market in flushing or china town and cooking them that same day. You may still not like them any way, I cant say. I know you are a very good baker so it is easy to beleive you are becoming a very good cook. Have fun!

      I didn’t know you liked scallops. I may try it again. Maybe with a different dish all together. I think it was the consistency of fish. I’m used to sturdier fish I guess. Is it suppose to be sort of slimy?

    cool, I did get to taste the scallops later on the day and all I kept wondering the whole time “What is this?” but I must admit, I felt like I was eating at a expensive restaurant with some exotic dish – so much on my seafood education. My mom convince me it was some sort of vegetable. Anyway I liked it, knowing its raw… I dont know how I feel now. Way to go!!

      I can’t believe mom convinced you that it was a vegetable. That is so funny. It wasn’t raw actually, I did cook it. I’m just not sure how well one has to cook them. I can’t believe you liked the fish.
